APRICOT CHICKEN

Makes 6 servings
Ingredients:
6 boneless skinless chicken breast halves
2 jars (12 oz. each) apricot preserves
1 envelope onion soup mix
Directions:
Stir together apricot preserves and soup mix in a bowl. Place a piece of chicken in the crock pot and spoon some of the mix over it. Continue adding chicken and apricot glaze until you've added it all. Cover and cook on low for 5 hours. After 5 hours, uncover and continue cooking on low for 2 more hours to cook the liquid down. Serve over rice.

BAKED BEAN HOT DISH

Ingredients:
½ lb. ground beef or turkey
¾ lb. regular or turkey bacon
½ cup chopped onion
1 (28 oz.) can baked beans
1 (16 oz.) can kidney beans, drained and rinsed
1 cup catsup
¼ cup brown sugar
3 TBS vinegar
1 tsp salt
Dash of pepper
Directions:
Brown ground meat in skillet. Drain, blot with paper towel, and put into crock pot. Brown bacon and onions together in skillet. Drain, blot with paper towel, and add to crock pot. Add remaining ingredients, and stir well. Cover and cook on low 4-9 hours.

BEEF STEW

Ingredients:
3 carrots, peeled and diced
6-8 potatoes, diced
2 yellow onions, diced
1-2 lb. stew meat
1 cup beef broth (canned or use bouillon cube dissolved in water)
1 tsp. Worcestershire sauce
2 cloves garlic, minced
1 bay leaf
Salt & pepper to taste
Directions:
Put all ingredients in crock pot in the order listed. Stir just enough to mix spices. Cover and set to low for 10-12 hours or high for 5-6 hours. Just before serving, mix 1 TBS corn starch with 2 TBS of cold water in a separate bowl until smooth. Stir corn starch mixture into stew.

LASAGNA

Makes about 8 generous servings
Ingredients:
6 ½ cups wide egg noodles
3 TBS. butter or margarine
1 lb. Ground turkey or 1 ½ lbs. Ground beef
2 ¼ cups spaghetti sauce
6 oz. shredded or cubed American or cheddar cheese
3 cups (12 oz.) shredded mozzarella
salt, pepper and grated parmesan to taste
Directions:
Cook noodles according to package directions; drain. Add butter and toss to coat. In a skillet, brown meat and drain. Spread a fourth of the spaghetti sauce in an ungreased crock pot. Layer with a third of the noodles, a third of the meat, a third of the remaining sauce and a third of the first two cheeses. Sprinkle with salt, pepper and parmesan to taste. Repeat layers twice. Cover and cook on low for 4 hours or until cheese is melted and lasagna is heated through.

MEAT LOAF
Ingredients:
2 lbs ground turkey or lean hamburger
2 eggs
2/3 cup uncooked oatmeal
1 pkg. dry onion soup mix
½ cup catsup or barbecue sauce
Directions:
Combine all ingredients and add to crock pot. Cook on low for 8 to 10 hours.

MEAT 'N' TATERS CASSEROLE

Makes about 6 servings
Ingredients:
6-8 med. potatoes, sliced
3 carrots, sliced
1 can peas, drained
3 med. onions, sliced
1 ½ lbs. ground beef or turkey
1 can tomato soup
1 can water
Salt & pepper to taste
Directions:
Brown meat in skillet. Place layers of the vegetables, in the order given, into crock pot. Season each layer with salt and pepper. Put the meat on top of the onions. Mix the tomato soup with water and pour over all. Cover and cook on low for 8-10 hours or high for 4-6 hours.

ROAST BEEF

Ingredients:
3-4 lb. beef roast
3-6 potatoes, quartered
2-3 carrots, cut into sticks
2 onions, sliced
½ cup water or broth
Salt & pepper to taste
Directions:
Put vegetables and salt in bottom of crock pot. Add meat on top. Add liquid and pepper. Cover and cook on low for 10-12 hours or high 4-5 hours. Remove meat and vegetables with spatula and place on a serving platter.
Hint: You can substitute a whole chicken for the roast. If using chicken, add herbs to the cavity of the chicken (basil, rosemary, oregano, thyme, and/or basil are good).

TERIYAKI FLANK STEAK
Makes about 4 servings
Ingredients:
2 lb. Flank steak or London broil
¼ cup Teriyaki sauce
Directions:
Put meat in crock pot and pour sauce on top. Cook on low for 8-10 hours.
