BEEF
BROILED STEAK
Makes 4 servings
Ingredients:
4 steaks (about 6 oz each)
2 tsp garlic powder
2 tsp onion powder
2 tsp dark brown sugar
1 tsp fresh, coarsely ground, black pepper
Vegetable oil
Directions:
Preheat the broiler in your oven for 400° F. Mix all seasonings together in a bowl. Brush steaks with oil. Sprinkle on seasoning mix on both sides of the meat, and press in with your hand. Cook under broiler for about 15 minutes, or until desired doneness, flipping every 5 minutes or so.

PEPPER STEAK
Makes 4 servings
Ingredients:
1 1/2 lbs of steak meat, sliced into strips
2 onions, sliced into strips
2 green peppers, seeded and sliced into strips
2 garlic cloves, minced
1 TBS olive or vegetable oil
Soy sauce
2 tsp fresh ground black pepper
Directions:
Put garlic and oil in a skillet, and heat while stirring. Don't let the garlic brown, or it will get bitter. Add meat and ground pepper, and cook until meat is browned, stirring often to coat meat with the garlic-flavored oil. Add onion and green pepper. Cover and simmer for about 5 minutes. Remove cover and continue to stir and cook until meat is completely cooked and vegetables are tender. Sprinkle soy sauce over all and stir to mix. Serve over rice.

BURGER MEAT (Ground beef, turkey, or chicken)
Hint: Thoroughly mix bread crumbs, (keep the heals in the freezer, then toss in blender before using), uncooked oatmeal, crushed crackers or matza into burger meat before cooking, to make a little go a long way.
ENCHILADAS
Ingredients:
1 lb ground turkey or hamburger
1 (6 oz) can tomato paste
3 (8 oz) cans tomato sauce
1 TBS chili powder (more or less to taste)
1 TBS onion powder
Salt and pepper to taste
1 pkg flour tortillas
12 oz shredded sharp cheddar cheese
Directions:
Cook meat in skillet. Drain. Add tomato paste, sauce, and seasonings. Simmer, covered, for 30 minutes. Stir in a little water if not "soupy". Dip tortilla in sauce, then spread flat in a baking dish. Use a slotted spoon to add a spoon of meat in the center of tortilla. Sprinkle in some cheese, and roll up. Do the same with each tortilla. When tortillas are wrapped, spread remaining sauce over the top and top with remaining shredded cheese. Bake at 350° F., for about 5 minutes, or until cheese is melted.

MEAT LOAF
Makes 4 servings
Ingredients:
1 lb ground turkey or hamburger
1/2 cup barbecue sauce, divided
1/2 cup bread crumbs
1/2 cup chopped onions
1/4 cup chopped green bell pepper
1 egg, beaten
1/2 tsp salt
1/8 tsp pepper
Directions:
Mix all ingredients, except for ¼ cup of the barbecue sauce, and shape into a loaf. Top with remaining barbecue sauce. Bake uncovered at 375° F., for 45 minutes.
ALTERNATE COOKING METHOD: You can cook this in the microwave by covering loosely with wax paper, and cooking on high for about 15 minutes, turning every 4-5 minutes. Let stand 5 minutes before cutting.

MINI MEAT LOAVES
Ingredients:
1 1/2 lbs ground turkey or hamburger
1 c Italian-style breadcrumbs
2 TBS chopped onion
5 oz can evaporated milk
3/4 cup barbecue sauce
Salt and pepper to taste
Directions:
Combine all ingredients. Stuff into an oiled muffin pan (or shape into 6 mini loaves on a broiler pan), and bake at 450° F., for 25 minutes.
Hint: Fill unused muffin cups with water before cooking, to prevent pan from warping.

CHICKEN OR TURKEY
BARBECUE CHICKEN POUCHES
Makes 4 servings
Ingredients:
4 boneless, skinless chicken breasts
1 bottle of barbecue sauce
1 green bell pepper, chopped
1 (15 oz) can of whole kernel corn
You will also need: aluminum foil
Directions:
Tear off four sheets of aluminum foil, and fold to make four little packets. In each packet, place one chicken breast, and top with a spoon of corn and some bell pepper. Pour barbecue sauce over all and seal loosely in foil. Bake at 450° F., for 20-25 minutes.

CHICKEN PARMESAN
Makes 6 servings
Ingredients:
6 frozen breaded chicken patties
1 jar of spaghetti sauce
1 (8 oz) package of shredded mozzarella cheese
Directions:
Heat/cook chicken patties according to package directions. Lay in a single layer in a shallow casserole dish that has a little bit of spaghetti sauce poured over the bottom of the dish. Heat spaghetti sauce in microwave or on stove until bubbling. Pour sauce over chicken patties and top with shredded cheese. The heat of the sauce will melt the cheese. If you like, you could put this in a 325° F. oven for about 10 minutes to make it firmer. Serve with rice or pasta, if desired.

SWEET & SOUR CHICKEN
Makes about 6 servings
Ingredients:
3 lbs cooked chicken (or turkey) breasts, diced
3 (15 oz) cans pineapple chunks in pineapple juice
4 carrots, sliced crossways
4 medium cucumbers, scored and diced
2 red bell peppers, diced
3 TBS white vinegar
2 TBS soy sauce
2-4 TBS light brown sugar, to taste
1 TBS vegetable oil
1 garlic clove, minced
Cornstarch
Optional: red and yellow food coloring
Directions:
Drain pineapple juice into a mixing bowl. Set aside pineapple chunks. Add soy sauce, vinegar, and brown sugar to juice. Stir and taste. If it is too tart, add more sugar. If too sweet, add more vinegar. Add food coloring, one drop yellow and two drops red, or until preferred color. Score cucumbers by running a fork across the skin all around, after washing. Cut and dice everything into bite-sized pieces. Heat up oil and garlic in deep skillet or large saucepan, taking care not to brown garlic. Add vegetables and stir-fry until crisp-tender. Pour in liquid and add pineapple chunks and meat. Stir. Heat until just starting to boil, then turn down heat and simmer, covered, for about 10 minutes, stirring occasionally. After 10 minutes, uncover. Mix 1 TBS cornstarch into 1/8 cup of cool water until smooth. Add to liquid in pot. Stir and cook until thickened. Serve over rice with chow mien noodles.
Hint: this is a good use of leftover turkey after Thanksgiving!

TASTY BAKED CHICKEN
Makes about 6 servings
Ingredients:
6 lbs chicken pieces
1 bottle Russian salad dressing
1 pkg dry onion soup mix
1 (8 oz) jar apricot preserves
Directions:
Mix together all ingredients, except the chicken, in a bowl. Arrange chicken in a baking pan, and pour sauce over chicken. Cover and bake at 325° F., for 1 hour and 15 minutes. Remove cover and bake 20 minutes more, or until chicken is cooked.

FISH
SALMON PATTIES
Makes 5-6 small patties (about 3 servings)
Ingredients:
1 (16oz) can of salmon
1/2 onion, diced
1 egg
Box of cracker meal
Vegetable oil for frying
Directions:
Mix salmon, onion and egg together in a bowl. Mix in cracker meal a little at a time until mixture will hold together in a ball and feels almost dry, but not entirely. Form patties with your hands, and fry in skillet of oil, until brown on both sides.
