If you don't have baking powder:
1 tsp baking powder = ¼ tsp baking soda + ½ c buttermilk or sour milk to replace ½ c of liquid in recipe (Sour milk is reconstituted sweetened milk plus 1 TBS lemon juice OR vinegar, then let stand 5 minutes).
If you don't have brown sugar:
1 cup brown sugar = 1 cup regular granulated sugar
If you don't have cake flour:
1 cup cake flour = 1 cup minus 2 TBS all purpose flour
If you don't have catsup or chili sauce:
1 cup catsup or chili sauce = 1 c tomato sauce + ½ c sugar + 2 TBS vinegar
(This only works for use in cooked mixtures).
If you don't have corn starch for thickening:
1 TBS cornstarch = 2 TBS flour
OR 4 tsp quick-cooking tapioca
OR 1 TBS potato starch
If you don't have dry mustard:
1 tsp dry mustard = 1 TBS prepared mustard
If you don't have an egg, you can substitute:
1 tsp baking powder + 1 TBS liquid + 1 TBS vinegar
OR 1 ½ TBS water +1 ½ TBS vegetable oil + 1 tsp baking powder
OR 1 tsp yeast dissolved in ¼ c water
OR 1 TBS apricot puree
OR 1 pkg. plain gelatin + 2 TBS warm water
OR 1 heaping TBS soy flour + 1 TBS water
If you don't have fresh garlic:
1 clove of garlic = 1/8 tsp garlic powder
If you don't have tomato juice:
1 cup tomato juice = ½ c tomato sauce + ½ c water
If you don't have unsweetened chocolate:
1 square unsweetened chocolate = 3 TBS cocoa + 1 TBS butter or margarine
If you don't have whole milk:
1 cup whole milk = 1 cup nonfat milk + 2 ½ tsp butter or margarine
1 lb almonds in shell = 3/4 - 1 cup shelled
1 lb American cheese, shredded = 4 cups
1 medium apple, chopped = 1 cup
1/4 lb bleu cheese, crumbled = 1 cup
1 slice bread = 1/4 cup fine dry crumbs
1 ½ slices bread = 1 cup of soft crumbs
2 TBS butter = one ounce butter
1 stick of butter = 1/4 lb OR 1/2 cup of butter
1 square of chocolate = 1 ounce of chocolate
8-10 egg whites = 1 cup
12-14 egg yolks = 1 cup
14 square graham crackers = 1 cup fine crumbs
Juice of one lemon = 3 TBS
Juice of one orange = 1/3 cup
4 ounces macaroni (1 1/4 cups) = 2 1/4 cups cooked
4 ounces noodles (1 1/2--2 cups) = 2 cups cooked
1 medium onion, chopped = 1/2 cup
Grated peel of one lemon = 1 tsp
Grated peel of one orange = 2 tsp
1 cup packaged pre-cooked rice = 2 cups cooked
28 saltines, crushed = 1 cup fine breadcrumbs
7 ounces spaghetti = 4 cups cooked
22 vanilla wafers = 1 cup fine crumbs
1 lb walnuts in shell = 1 ½=1/2-1 3/4 cups shelled
1 cup whipping cream = 2 cups whipped cream or Cool Whip
3 tsp = 1 TBS
